gruberamy ,I made this today. The crust didn't turn out crusty. The only thing I did different was I put a container of water on the lower rack, would that make a difference, I did spitz it every 10 mins too. I thought that would really crisp up the crust! Oh yes, also I used convection baking, would that do it? There was no larger holes in the bread either but when I put in the loaves there were all kinds of large bubbles in it. I am getting frustrated as I have tried so many ciabatta bread recipes and none have turn out as good as the store bought ones. Edited for the rating as it was just regular tasting bread and not what I was hoping for.

deeder5 ,This is a very wet dough. Be sure to have a well flour board when shaping dough. I made second loaf brushed with olive oil and sprinkled with flaky sea salt and fresh rosemary. Delish

triciafan ,Very good! Going to make it smaller to keep in freezer! It didn't turn out like a Ciabatta (full of holes inside)

marialuna78 ,Loved it but I think there was a mistake somewhere in my process: I got good flavor and consistency but no rise. My dough cycle of my machine is 1.5 hrs. The dough was sticky and very wet/liquid at the end so really hard to manage. After the 1.5 hrs let it rest first for 15 minutes in a bowl, then spread it out on two loafs for 45 minutes, covered and then to the oven for 25-30. What could have gone wrong? Thanks you in advance to whoever gives me a clue... loved the recipe and want to make it again.

jenni1965 ,I have made this recipe easily 5-10 times, I love how versatile how it is and how easy and delicious it is. I make smaller breads and freeze the leftovers.

christinespanglerclark ,Use your fingertips like the tines of a fork to dimple the dough before letting it rise. You'll have nice holey bread :) Also, make sure you wet your hands before handling the dough to minimize sticky dough issues. This bread was really, really yummy. I will make it again!

rh1037b ,My oven runs hot so I would bake this at 375 for 20-25 minutes, and I only used 3 C flour. Maybe 425 would work with yours. I let it rise about 1 hour, it was quite nicely crusty without misting. That being said, this is one of my favorites, and very simple and rustic.

racheldillin ,Wonderful results! A bit scary getting there. Dough is VERY sticky and wet, but I didn't add to it. I had to make blobs for loaves, and dimpling didn't really happen (it was more like sticking my fingers in and stuff sticking to them), but they were GREAT! We sliced it, and turned it over, brushed w/ oil, put spices on it and toasted it. Wonderful. I'll make it every week.
