Tired of the same old spaghetti with meat sauce? This healthy spaghetti pie is a fun way to change things up in the pasta department! 283 calories and 6 Weight Watchers Freestyle SP
When I was a kid, I was all about spaghetti and meat sauce. Not much seems to change from generation to generation. It is now my youngest son’s most requested pasta meal. In fact, there is always a little sparring battle between the pesto lovers and the tomato sauce lovers in our house, so I try to fairly rotate between the two to keep the peace.
“Pasta for dinner, Mum? We had pesto last time. It’s tomato sauce tonight, right?” It’s as though the boy marks our pasta consumption on his calendar. I can always count on him to keep me on the straight and narrow, pasta-wise anyways.
But let’s be honest, there are so many times that you can eat spaghetti with tomato sauce before you are ready to swear off of pasta altogether. That’s when you know it’s time to change things up, either with different mix-ins (meats, beans, veggies) or by varying the cooking method.
Baked pasta dishes are a great option for serving a crowd or for using up leftovers. If there is extra spaghetti sitting in your fridge, toss it with a couple of eggs, some cheese and any mix-ins you desire before transferring it to a pie dish.
Traditional spaghetti pie usually involves a very generous dose of cheese – Parmesan, ricotta, mozzarella, asiago. I lightened things up by reducing the amount of cheese - just enough flavor and gooeyness without going overboard.. Feel free to change up the cheese mixture to your liking.
Be sure to let the spaghetti pie sit for 10 minutes to allow the pie to set before cutting into wedges.
