During the height of the panic, I felt anxiety and dread about what was coming. I had read an early article from a doctor warning us about what was happening with Corona Virus in Italy and that we needed to take self-isolation seriously. At that point the NBA had been canceled, Tom Hanks had it and I just felt dread.
I found myself at the grocery store panic buying the biggest bag of rice I could carry in my shopping cart. Realizing now that my anxiety was talking I felt like I needed control. Everything felt very out of control and buying a few staples made me feel like I had control in a very serious situation.
As a meal prep specialist I know I can make easy meals out of the things I have but I wanted to share some easy Epicure meals that you can make with some pantry staples.
